Capitalizing on Kitchen Technology - Technology Times Three

Technology Times Three

Foodservice operators are constantly contending with everything from mold and viruses to bacteria and allergens.

Everidge has leveraged three types of cutting-edge technologies that help ensure walk-ins are adhering to the highest standards of hygiene and durability.

“From an end user, dealer or consultant standpoint, all three technologies can be implemented individually or utilized together,” says Eric Wickberg, Everidge’s vice president of sales.

Sanisteel® is an antimicrobial surface exclusive to Everidge that mold cannot latch on to. Not only are the pre-coated steel interior cooler panels and/or floors antibacterial, these are highly resistant to corrosion and scratches for a long service life. In addition, the floors offer better slip resistance than ADT by ASTM F 1679 test standards.

“This technology, introduced in 2011, has been incredibly popular,” Wickberg notes. “With its anti-slip properties, Sanisteel floors not only are safer than diamond tread and ADT but also provide cost savings from these optional add-ons.”

Another technological advancement, Everidge UV Pro by Aerapy®, is a compact, wall-mounted unit that is easily installed to reduce food waste and shrinkage, mold, bacteria and other pollutants in walk-ins. It uses only 1 amp per device and decreases carbon footprints due to reduced waste.

“UV Pro utilizes UVC technology, which leverages air flow circulation from the cooler’s coils that circulate air,” Wickberg explains. “A fan circulates air past the UVC light, and this is then purified of airborne pathogens like mold spores and bird flu from raw chicken.”

This not only enhances food safety within the walk-in but also increases the shelf life of the products being stored in the cooler.

“With 40% of food produced in the U.S. never consumed due to food spoilage, the big trend with foodservice consultants is how do we reduce this percentage,” Wickberg says. “UV Pro is one piece of the puzzle to reduce spoilage and minimize food waste.”

With its multiple layers, Sanisteel is engineered to eliminate many harmful and potentially dangerous bacteria strains. With its multiple layers, Sanisteel is engineered to eliminate many harmful and potentially dangerous bacteria strains. The third Everidge technology is called SmartRite®, a proprietary, state-of-the-art monitoring system for walk-ins. This Wi-Fi compatible system provides cloud monitoring of humidity, temperature and alarms. It also has the ability to fully monitor two rooms, front to back, using only one unit. SmartRite provides automated digital HACCP logging and tracking, enhancing food safety monitoring. It includes two dedicated door/jamb heater outputs, along with a dedicated VU-port heater output. SmartRite’s interconnection capabilities between alarm/monitor systems allow for light and panic operation from multiple doors. It features a 5-inch TFT full-color touchscreen display and works with a user-friendly mobile app via AppStore and Google Play store.

“SmartRite is proprietary to Everidge brands but walk-ins can be upgraded with this system,” Wickberg says. “It addresses humidity with high and low alerts, signals when a door is open for long periods and was recently recognized by FCSI as an innovative technology.”
