Service Tips: Combi Ovens

A good combi oven can easily cost an operator tens of thousands of dollars. That sort of investment is worth protecting with regular care, cleaning and maintenance. Here are a few tips to keeping combis up and running.

  • Many combis have built-in cleaning systems. While highly useful, it’s important to keep an eye on these systems. Make sure to use the cleaning solutions recommended by the manufacturer and that your solution levels are high.
  • Like all water-using equipment, combis will require regular descaling.
  • Take care of the interior drain. Make sure a screen covers the drain. Don’t send grease or food debris down the drain, where it can harden and cause a clog.
  • Simple misuse can cause problems with combi ovens. Train staff not to slam the door or rest anything on it while open. Doing so can damage hinges and gaskets, lowering the unit’s efficiency or even making it unusable.
