CFESA Service Tips: Charbroilers

Charbroilers are one of the most straightforward pieces of foodservice equipment but servicing them should not be taken lightly.

Ultimately, they're just heat and some grates. That simplicity doesn't mean their care should be taken lightly, though. A poorly maintained charbroiler can lower food quality and even present a fire risk. A few tips to keep charbroilers working properly:

• Clean their grease troughs and exterior surfaces daily.

• Keep grates clear by placing them face down on the broiler to burn off debris.

• Replace elements and grates twice a year.

• Ensure proper flow of air and gas by checking units for proper ventilation and keeping pilot lights and air shutters clean.
