Ultimately, they're just heat and some grates. That simplicity doesn't mean their care should be taken lightly, though. A poorly maintained charbroiler can lower food quality and even present a fire risk. A few tips to keep charbroilers working properly:

• Clean their grease troughs and exterior surfaces daily.

• Keep grates clear by placing them face down on the broiler to burn off debris.

• Replace elements and grates twice a year.

• Ensure proper flow of air and gas by checking units for proper ventilation and keeping pilot lights and air shutters clean.
