Equipment:

  • Evolution Steamer – Preheated to 212°F
  • AccuSteam Griddle – Preheated to 350°F

Servings: 6 (4 shrimp per plate)

Ingredients:

  • 24 (8/12 count) Tiger Shrimp, peeled/deveined, tail on
  • 24 slices Applewood smoked bacon
  • 1 cup coarse ground polenta
  • 4 cups water
  • 1/3 cup Reggiano Parmesan
  • 2 Tbsp unsalted butter
  • Salt and pepper to taste
  • ½ cup pumpkin puree
  • 1 cup butternut squash, ½-inch diced
  • 1 cup arugula, torn into ½-inch pieces
  • 4 tsp chopped pecans

Method:
Wrap each shrimp with bacon and secure with a toothpick if needed. Set aside.

For a creamier texture, pulse-blend polenta 45–60 seconds until smooth. Combine polenta, water, and butter in a solid 4-inch half hotel pan and stir. Steam for 25–30 minutes, stirring at 5 and 20 minutes- ensure no lumps. Once creamy, fold in pumpkin puree, then season with salt and pepper.

Steam butternut squash in a perforated 4-inch half hotel pan for 15 minutes or until tender. Set aside.

While polenta cooks, grill bacon-wrapped shrimp on the griddle for 8–12 minutes, turning after 5 minutes. Bacon should be crisp and shrimp fully cooked (no grey inside).

Plating:
On a round plate, spoon polenta in a crescent shape. Arrange shrimp alongside. Garnish polenta with squash, arugula, pecans, and Parmesan. Serve immediately and enjoy!
