Simply open the door and place all hot food items directly into the MultiFresh® to chill in about 90 minutes or freeze in 4 hours. This accelerated blast chilling process can double or even triple a fresh product’s shelf life, which means food can be prepared during slower times for usage during rush periods.

Other functions are equally simple to perform. For example, by pushing a single button, you can start a cycle to hold raw dough frozen and then thaw, proof and retard it in a humidity-controlled cabinet. To ensure consistency, all cooking and chilling parameters can be saved in the MultiFresh® so they can be used over and over again. All cycles are fully customizable to meet individual operator needs. Sophisticated Irinox technology is what drives this innovative blast chiller. The air temperature within the cabinet is consistent top to bottom, thanks to a specially designed evaporator coil. With its reverse air flow, instead of blowing cold air directly onto food, the MultiFresh® rapidly removes the heat and gently replaces it with cold air without any surface dehydration or freezing.

The MultiFresh® also saves time and labor. Since items can be safely thawed in the MultiFresh® overnight, there’s no need to use gallons and gallons of water to thaw the product or take up valuable space in the walk-in cooler. Thawing, like all the overnight cycles, needs no supervision, freeing up kitchen staff for other duties.

By using the core probe, all pertinent HACCP data is recorded and can be downloaded to a computer or memory stick as needed. That saves the tedious record-keeping work needed to comply with food safety guidelines.
