They can heat different types of food in seconds using customized programs for the best result. This flexibility has made them mainstays in coffee shops, sandwich concepts and more. Here are tips to keeping these units operating properly:

  • Rapid-cook ovens frequently reach several hundred degrees. Before staff clean a unit, they should make sure it is off and cool.
  • This type of oven typically has several components in the cooking chamber that should be removed for cleaning. Prior to cleaning, staff should be trained on how to remove these components and reassemble the unit.
  • Wipe down the interior and exterior of the unit with approved cleaning solutions and nonabrasive rags or sponges. Don’t use a hose to wash down a unit.
  • Fans and louvers must be cleaned regularly. This task may require removing panels, so operators should consider including this task in their planned maintenance agreements.
