Stone hearth units can be showpieces for pizza places, among other operations. But their price tag and the importance to their operations mean restaurants should invest in their upkeep.
- Clean the deck or decks of a stone hearth oven on a daily basis. This could require an oven brush or a heavy-duty vacuum. Don’t use the vacuum on solid-fuel ovens, though, since it could suck up a smoldering ember.
- Take extra care when scrubbing around burners. While the stone surface is extra durable, these components are not.
- Wipe down the interior with soap and warm water, but avoid abrasive cleaners that can damage stainless-steel surfaces.
- Keep the flue and vents cleared of debris. If using solid fuel, have the flue pipe cleaned regularly, since residue from these fuels can cause a fire.
