Service Tips: Stone Hearth Ovens

Stone hearth units can be showpieces for pizza places, among other operations. But their price tag and the importance to their operations mean restaurants should invest in their upkeep.

  • Clean the deck or decks of a stone hearth oven on a daily basis. This could require an oven brush or a heavy-duty vacuum. Don’t use the vacuum on solid-fuel ovens, though, since it could suck up a smoldering ember.
  • Take extra care when scrubbing around burners. While the stone surface is extra durable, these components are not.
  • Wipe down the interior with soap and warm water, but avoid abrasive cleaners that can damage stainless-steel surfaces.
  • Keep the flue and vents cleared of debris. If using solid fuel, have the flue pipe cleaned regularly, since residue from these fuels can cause a fire.
