Cleaning and Maintaining A Fryer

Fortunately, fryers don’t require extensive maintenance. Operators should use hot, soapy water or a grease cutter solution to wipe down units daily.

For more extensive interior cleaning, operators should use a boil-out cleaner added to water. First, bring the temperature of the water up to a rolling boil per instructions on the boil-out cleaner container. Because oil and water do not mix, thoroughly wipe dry the vat’s interior before use. Otherwise, the oil will pop, and burns are a risk.

Keep clean all louvers and vents on high efficiency fryers with blowers.
