Service Tips: Ventless Fryers

Ventless fryers are becoming increasingly popular in restaurants that don’t want to deal with the expense of a hood and are out to simplify operations. These units aren’t hassle-free, though. Here are some tips to keeping ventless fryers operating well.

  • Ventless fryers typically have a chamber or chute where staffers load uncooked food. This chamber needs daily cleaning as per the manufacturer’s instructions.
  • The food exit chute and cooking basket require regular cleaning following the guidelines from the maker.
  • Wipe down the interior and exterior of the unit daily to prevent the accumulation of grease.
  • Ventless fryers have air vents. If blocked, the units will not operate properly. Check these vents regularly and remove any debris.
