Big Table Restaurants hired Donald Gale to serve as director of culinary for the Atlanta-based multiconcept operator. The company’s portfolio of concepts includes HOBNOB Neighborhood Tavern, Cattle Shed Wine & Steak Bar and Big Table Events & Catering.
Gale will focus on menu development, multi-unit operations consistency and training, supply chain vendor collaboration, testing/feedback performance analytics and operational fit.
Most recently he was director of research and development, procurement and culinary for Southern Proper Hospitality Group’s Tin Lizzy’s brand in Atlanta. He also served as vice president of research and development and procurement for Outback Steakhouse. Previous positions also include director of research and development and culinary for Metro Diner in Tampa and vice president of research and development and procurement of Blackburn Ameripub in North Carolina.
