Chipotle Unveils Responsible Restaurant Design

Fast-casual chain Chipotle Mexican Grill took the wraps off a new all-electric restaurant design, which includes all-electric equipment and systems. Specifically, the design features a smaller cookline and improved exhaust hoods compared to other Chipotle kitchens, per a company release.

Images courtesy of Chipotle Mexican Grill.Other features of Chipotle’s Responsible Restaurant Design prototype include: rooftop solar panels (where feasible), heat pump water heaters, energy management systems (which have already been deployed in most existing restaurant locations), biodegradable service ware, cactus leather chairs, artwork made from recycled rice husks and electric vehicle charging stations at select locations.

Chipotle has opened two locations that use this prototype – one each in Gloucester, Va., and Jacksonville, Fla. – and plans to open another in Castle Rock, Colo., later this year.

Chipotle Mexican Grill Jacksonville FL Full Frame 4X6 20Chipotle’s Responsible Restaurant Design prototype includes rooftop solar panels.The new restaurant design pilot will help Chipotle progress toward its science-based targets, established in alignment with Science Based Targets initiative (SBTi), to reduce direct and indirect greenhouse gas emissions 50% by 2030 compared to a 2019 baseline, per a company release. Chipotle plans to have more than 100 of its new locations in 2024 utilize all-electric equipment and at least some additional elements from its new design.
