Pizza prep tables are sturdy and seemingly simple pieces of kitchen equipment. These units need the same care as standard refrigerators and should not be abused by kitchen staffers.
- Keep all coils and vents clear of debris. If these components get clogged, the unit may not cool as effectively. It will use more electricity and likely break down sooner.
- Train staff on proper use/abuse of these units. No sitting on doors or slamming drawers. No standing on the table to change a lightbulb or grab supplies stored overhead. All these can damage a unit.
- Replace any damaged pans or pan holding rails. A warped pan can let cold air escape and raise food safety concerns.
- Don’t overload the storage area. These units are designed to circulate cold air across the bottom of pans. Over-filled units could disrupt the airflow.
- Wipe down the unit daily with a non-abrasive cleaning solution and non-abrasive cloth or sponge. During cleaning, staff should check gaskets for damage.
- If the work surface is removable, remove it daily for cleaning.
