Guide to Blast Chillers

The Basics

Blast chillers remove the heat from food, bringing temperatures down from 160 degrees F to 38 degrees F in 90 minutes or less, reducing the possibility of bacterial growth.

Quick Fact

Blast chilling foods forms microcrystals on products, which can keep food from becoming dehydrated.

Cleaning and Maintaining

Be sure to clean the blast chiller’s condenser every 30 days, using nonmetal brushes to remove all dust and dirt from the condenser blades.

Did You Know

Purchasing a blast chiller represents an investment that can pay for itself in time and labor savings.

The menu will help identify an appropriate unit. More delicate food like bakery items may be better suited for a softer, more gradual chill process, while meat and other heartier products can withstand a hard chill.

By the Way...

For operations with varying production levels, blast chillers that provide two independent cooling compartments can provide additional flexibility.
