The Basics

Kitchen ventilation systems are used in commercial cooking applications to remove cooking heat and effluent. Hoods are custom designed for each application and categorized by use.

Quick Fact

When heavy grease buildup is not removed the ventilation system can be compromised and will need replacing sooner rather than later.

Maintenance for ventilation systems depends upon the type and volume of cooking as well as local codes. Be sure to clean grease filters and the capture area on a weekly basis. Less-efficient grease extractors will need cleaning more often.

Automated cleaning systems are available, and an ultraviolet light option helps break down grease in high-volume applications.

Choosing Ventilation

When specifying a ventilation system, operators need to weigh the importance of several factors, including cost, energy efficiency and/or aesthetics.

By the Way...

When placing a ventilation system, consider the balance of air and the placement of vents, and ensure that too much air will not blow on prepared food.
