Stuart is a foodservice veteran with over 20 years of experience in the industry. After obtaining a culinary degree from the New England Culinary Institute in Vermont, he worked as a chef in some of the top restaurants in Chicago.
Stuart used his experience as a chef to begin a career in foodservice design and consulting. He has a deep understanding of how a kitchen works, and applies a unique, solution-oriented design to every project.
During his career, Stuart has worked on hundreds of foodservice design projects worldwide, ranging from private residences to boutique restaurants to large-scale luxury resorts.
Stuart founded his own firm, Stuart Davis Design, in 2022, which offers full-scale design and drafting services to the foodservice industry.
Combining culinary passion with over 23 years of fine dining experience, Garron has developed a keen eye for finding inefficiencies that work on paper but not in the real world. From initial concept to final creation, Garron spearheads the design, development and training of every food and beverage project at Davidson Hospitality Group.
Mike Kostyo is the Vice President at Menu Matters. Kostyo has been a recurring guest on Fusion TV’s “The A.V. Club” show; has been featured on NBC News, CBS Radio and Gimlet Media’s “Why We Eat What We Eat” podcast; is regularly featured in newspapers and magazines; speaks at numerous conferences across the country and was a judge on Food Network’s “Eating America.” For nearly 11 years, Mike was an associate director and trends expert at one of the industry’s largest research firms. Kostyo has a master’s in Gastronomy from Boston University, plus certificates in the culinary arts, baking arts, wine and artisan cheese production.
