Multiconcept operator Half Eaten Cookie Hospitality named Jordan Wallace its culinary director. In this role, Wallace will focus on “improving operations, encouraging chef creativity and strengthening leadership among the concepts,” per a release.
Wallace will split his time between Boulder, Colo.’s OAK at Fourteenth, which was recently recognized by the Michelin Guide as a recommended restaurant; Corrida, Bellota, and Denver’s Brider.
Wallace’s career spans more than 20 years. Most recently, Wallace was the culinary and operations director for Pizzeria Locale. His background also includes serving as a sous chef at Frasca Food & Wine for five years.
