Ruby Tuesday appointed Mike Ellis to serve as chief development officer for the casual dining chain.

A 30-year veteran of the restaurant industry, Ellis most recently served as chief development officer for Einstein Noah Restaurant Group, working with the company’s Einstein Brothers Bagels and Noah’s New York Bagels concepts. His background also includes working in development roles for such restaurant concepts as O’Charley’s, Carlson Restaurants Worldwide, Burger King Inc., Darden Restaurants Inc., and DF&R Restaurants.
