Chef Jeremy Coco takes on new challenges for the Louisiana sports bar chain.

Walk-On's Bistreaux & Bar named Chef Jeremy Coco its new director of culinary operations and training.

Hiring a culinary chef for a four-location sports bar chain is part of the company's overall efforts to upgrade and streamline its food and processes. Walk-On's is one of several brands run by Last In Concepts. In his new role Coco will head up the chain's training efforts and will lead the kitchen staff at all of the parent company's brands including Happy's Irish Pub, The Roux House and Schlittz & Giggles as well as Walk-On's Catering.

Coco most recently served as the dean of education at the Louisiana Culinary Institute. He has also served as sous chef for the International Marketplace at Casino Rouge, executive chef at Café Vermilionville and executive chef/partner with Fleming's Prime Steakhouse & Wine Bar.
