Service Tips: Flight Type Warewashers

Large warewashing systems like flight-type units are popular in high-volume environments, like schools, hospitals and hotel catering services. Keeping these warewashing machines up and running is essential to the success of these operations:

  • The conveyor system used by flight type warewashers is key to their operation. Different components on different units keep these systems working. Consult your owners’ manual for instructions on lubricating chains, or signs of belts that are failing.
  • Train staff on loading these units properly. An overloaded unit can end up damaging the conveyor system. Poorly loaded units can result in dishes that simply aren’t properly cleaned and sanitized.
  • Flight-type units typically have plastic curtains that help contain steam and water within the unit. Replace any missing or damaged curtains to ensure proper cleaning and a safe, pleasant environment for team members.
  • Flight-type machines should be cleaned daily. Follow manufacturers’ instructions on removing and cleaning the unit’s arms, screens and strainers.
  • Look out for leaks around flight type machines, just like you should with all water-using equipment. Often the problem is something simple, like a loose hose. If ignored, though, a leak can lead to poor cleaning/sanitizing of dishes and serious damage to a very expensive piece of equipment.
