According to Andrew Freeman & Co., biscuits represent the next hot baking trend. Ice cream sandwiches are another emerging food trend. But cupcakes? So over. Among breads, pretzels, flatbreads (naan, papadum, lavash, pita, tortillas) and bagels also rank among the top trending items in the National Restaurant Association's "What's Hot 2014" chef survey. And Ben Stanley, CEO of Food Genius, a restaurant menu trends database, noted that, aside from pretzels and brioche, gluten-free items became the biggest trend in baked items during the past six months.
