Former Fleming’s executive Skall joins the 11-unit restaurant chain.
Paul Martin’s American Grill tapped Russell Skall to serve as director of culinary. In his new role, Skall will oversee all Paul Martin’s culinary teams, menu development, and sourcing for the concept that has 11 locations spread across California, Arizona and Texas.
Skall spent the past 17 years as executive chef at Fleming’s Prime Steakhouse & Wine Bar. His background also includes working with Sullivan’s Steakhouse in Austin, Texas; the Ritz Carlton Hotel in Dana Point, Calif.; Princess Resort in Phoenix; and Ruth’s Chris Steak House.
