UL Tests Ensure Safe Operation of Ventless Equipment

Content sponsored by: Alto-Shaam

With space at a growing premium, operators are gravitating towards compact equipment that can cook food safely without the need for expensive overhead ventilation systems.

In the United States, commercial cooking equipment must pass emission standards outlined by the Environmental Protection Agency in order to be utilized outside of a traditional ventilation hood.

UL LogoUnderwriters Laboratories (UL), a 120-year-old third-party organization, tests commercial cooking equipment against these emissions requirements in their controlled laboratories.

Once certified, foodservice equipment is labeled with the UL evaluated mark, which assures foodservice operators that their equipment has been rigorously tested to ensure safe operation.

Vector® Countertop Ovens Outperform

Alto-Shaam Vector H Series Countertop Multi-Cook Oven When choosing ventless equipment, operators should consider space restrictions, along with the technology that allows the equipment to meet grease emission standards.

Commercial cooking equipment commonly utilizes built-in or add-on technology that eliminates grease-laden effluents and releases clean air, such as ventless hoods or built-in circulations systems.

Alto-Shaam’s Vector® Multi-Cook Oven Countertop H Series models exceed emission standards by releasing half of the grease-laden effluents allowed under UL-710B. This means that operators can cook fatty-proteins within their equipment’s warranty and without needing to exhaust.

The catalyst combined with the Vector’s exclusive Structured Air Technology® work together to remove airborne grease particles.

This game-changing innovation offers up to four ovens in one—each chamber with independent temperature, fan speed and cook time control for unmatched food production, efficiency and quality.

Ventless Certification Localized

Most jurisdictions adopt the UL ventilation standards outlined in the International Mechanical Code, which is the most widely used code in the United States. However, some local jurisdictions adopt their own requirements.

Alto-Shaam’s dedicated Regulatory Compliance team works closely with these jurisdictions in order to smooth the equipment approval process for operators.
