Smoked Half Chicken in a Combitherm® Oven

11 Madison Park Chicken

Introduce bold new flavors to your menu by using an Alto-Shaam Combitherm® Oven with the optional CombiSmoke® feature.

Ingredients:

  • 1 Whole chicken divided into two halves
  • Canola Oil
  • Salt and pepper to taste
  • Apple wood chips

Brine:

  • 6 cups warm water
  • 1 Each Bay Leaf
  • 2 Tablespoon Mustard Seed
  • 1 Cup Brown Sugar
  • 1 Cup salt

Preparation:

Prepare the brine for the chicken by combining all ingredients and stir until the salt and sugar is completely dissolved. Transfer the brine to a refrigerator to cool. While the brine is cooling, carefully remove the backbone from the chicken using a sharp chefs knife or kitchen shears. Once the backbone is removed, place the chicken skin side down and divide the chicken in half by cutting between the breast meat. You can also ask your local butcher to split the chicken for you. Once the brine is completely chilled, add the halved chicken to the brine. Placing the brine and chicken in a gallon sized zipped top bag allows for greater surface contact. Place the brined chicken into the refrigerator for 6 to 12 hours. 

Remove the chicken halves from the brine and lightly rinse and dry. Place chicken halves on a racked sheet pan and insert removable probe. Allow the chickens to dry uncovered in the refrigerator for at least 30 minutes. It is very important that the chicken develop a pellicle for best results during the smoking process. After the chicken has dried and formed a pellicle, lightly brush the chicken with oil and season with salt and pepper. 

Soak wood chips in water for 15 minutes and add to smoker box.

Preheat the Combitherm to 350F. Cook the chicken halves at 350F in convection mode with the CombiSmoke feature turned on, 100% humidity level and a 20% fan speed setting. The program is complete when the probe reaches 165F.
