Operations can use convection ovens to prepare many different menu items. By circulating air in the cooking chamber, they can shorten cooking times and produce crisp crusts on baked goods. Here are a few tips to keep convection ovens running smoothly.
- Convection ovens typically use a snorkel for air intake. Make sure to follow the manufacturer's guidelines regarding snorkel placement. Check the snorkel regularly to ensure it's not blocked by dirt or any bits of food.
- On a similar note, check the blower wheel regularly for any obstructions. These can reduce the speed of convection and even lead to a costly repair job.
- Clean out the cooking chamber of convection ovens daily using warm, soapy water.
- Like all ovens, convection units need a sealed cooking chamber to work effectively. Check the door seals and hinges regularly.
