Grills and griddles are primary pieces of equipment in commercial kitchens that perform a variety of cooking tasks.
The primary function of a grill is to cook a variety of foods at high production levels with as short a recovery time as possible. Culinary staff can prepare almost any type of meat, fish or vegetable using these units.
Griddles are most often used to prepare breakfast items like pancakes, French toast, eggs and bacon. These units also cook a variety of meats, including hamburgers, steak and chicken breasts. In addition, stir fry dishes are commonly made on griddles.
More obscure tasks, such as bun toasting and searing meat, also can be performed using this equipment.
