The Victory HI5 Blast Chiller/Freezer performs five key functions in one product. It blast chills, shock freezes, thaws, is a dough retarder, and slow cooks and can be programmed to perform all of these functions without interrupting the cycles or opening the door. For example, thaw up to 100 pounds of filets, then slow cook on sheet pans, blast chill to prepare for storage and then hold at 36 degrees F until the product is unloaded from the unit. Its small footprint makes it ideal for smaller kitchens and no ventilation system is required for the slow cooking process.
