Locally Sourced Ingredients and Other Top Foodservice Trends for 2014
If the results from the National Restaurant Association’s “What’s Hot” culinary forecast of menu trends for 2014 is any indication, the concept of environmentally friendly practices continues to grow deeper roots in the foodservice industry. For example, the survey of nearly 1,300 professional chefs — members of the American Culinary Federation — listed locally sourced meats and seafood as the top culinary trend for 2014 and environmental sustainability as the current culinary trend that will be the hottest menu trend in 10 years.
Members of the Foodservice Consultants Society International — The Americas Division elected three new individuals to serve on its Board of Trustees: Dick Eisenbarth, FCSI, Cini Little International; Christine Guyott, FCSI, RD, Robert Rippee and Associates; and Eric Norman, FCSI, MVP Services. Unified Brands’ Eric von Kaenel was elected to represent the allied partners on FCSI-Americas’ Board of Trustees.

The National Restaurant Association’s Restaurant Performance Index reached 100.9 in October, its highest level in four months. The monthly composite index increased 0.7 percent compared to September.

Jack Mullins considers himself a foodservice industry lifer. He became a dishwasher in a restaurant at 16, and also served as a line cook at a steakhouse before rising through the ranks to become a restaurant manager.
The Passing of Paul Johnson
Paul Johnson, a foodservice equipment industry veteran with nearly 30 years of experience at ITW and Scotsman Ice Systems, passed away on December 2. He was 68 years old.
