Blue Plate Catering in Chicago takes the contents of traditional box lunches, makes them a little more upscale and turns these items into a food station with contents ranging from pressed Panini wedges to peanut butter, honey and banana sandwiches, sweet potato fries and veggie-stack pita pockets. Other options include panko-crusted chicken satay with cognac mustard and white cheddar macaroni with choose-your-own-toppings such as red pepper flakes, smoked bacon, sun-dried tomatoes and scallions.
