CFESA's Maintenance Tips for Charbroilers

Some quick tips for maintaining charbroilers.

The complexity of some equipment means that service agencies need to be involved in most preventative maintenance steps. For simpler types of equipment, though, operators can handle much of the maintenance. Among these are charbroilers.

While some of these steps may be best left to a service agent, others can be carried out by kitchen staff:

  • Keep the unit clean. Clean grease troughs and the exterior service daily.
  • Burn off grates by placing on broiler face down.
  • Keep air shutters clean.
  • Keep pilots clean.
  • Replace elements and grates twice annually.
  • Check for proper ventilation.
